Green is your most obvious and flexible third color, though, with the cross-synergy of GW Food effects hard to ignore (and some decent food generation in black to boot)
Also, once the ability is on the stack, even if the creature with the mechanic is removed from the battlefield or combat one way or another, the smaller creature will still get the +1/+1 counter as long as its power is still less than the Mentor creatures was as it last existed in combat
This means that if the creature doesn't enter the battlefield with oil counters on it, there isn't an opportunity to put oil counters on it after it has already entered to get Ichorplate Golem's first ability to trigger
It may only enter with four +1/+1 counters on it, but it doubles the counters on all of your creatures whenever it attacks
You could also be a bit trickier by including creatures with Evoke
